🍜 Delicious Vegan Soba Noodle Soup Recipe 🌱


Warm up with this healthy and nourishing vegan soba noodle soup!


Ingredients:

- 4 cups vegetable broth

- 1 cup water

- 2 tbsp coconut aminos

- 1 tbsp miso paste

- 1 tbsp sesame oil

- 2 garlic cloves, minced

- 1-inch ginger, grated

- 1 cup sliced mushrooms

- 1 carrot, thinly sliced

- 1 bell pepper, sliced

- 1 cup bok choy or spinach

- 8 oz soba noodles

- Green onion and sesame seeds for garnish


Instructions:

1. Cook Noodles: Boil soba noodles as per package instructions, then drain and rinse.

2. Prepare Soup: In a pot, heat sesame oil, sauté garlic and ginger, then add mushrooms, carrot, and bell pepper. Cook until softened.

3. Add Liquids: Pour in broth and water, stir in soy sauce and miso, and bring to a simmer.

4. Add Greens: Stir in bok choy or spinach, cooking until wilted.

5. Combine: Add cooked soba noodles, heating through.

6. Serve: Garnish with green onion and sesame seeds. Enjoy!
